A Short Biography Of My Career
National and international award winning Pastry Chef, with 5-star 5-diamond Hotel and 5-star Restaurant experience. Involved in the opening of major hotels and resorts, retail and large volume wholesale bakeries, and award winning fine dinning restaurants. My involvement includes kitchen design and specification, staffing, training, and overseeing daily operations.
Early training came from my family of four generations of pastry professionals, and I have been involved in culinary training programs with accredited culinary schools. I have contributed to menu design and production for many celebrities, foreign dignitaries, and five United States Presidents. My repertoire includes working with chocolate, marzipan, pastillage, breads, breakfast bakeries, mousses, souffles, cakes, pies, frozen desserts, plate design, and confections. My managerial strengths are organization, sanitation, employee relations, cost controls, and consistency.
